Chocolate Biscoff Ice Cream Bars

It's Ice Cream Time!

Ingredients for 6 ice cream bars:

  • 250ml plant cream
  • 50ml oat milk
  • 4tbsp maple syrup
  • 1tbsp custard powder
  • 1tbsp vanilla paste
  • 100g cashews (soaked in boiling water)
  • 2 tbsp Biscoff spread
  • 200g 70% dark Chocolate
  • Desiccated Coconut - optional

Method:

  1. Soak the cashew nuts in boiling water for 1 hour
  2. Add the plant cream and oat milk to the pan with the maple syrup, custard powder and vanilla
  3. Whisk together on medium heat until boiling
  4. Remove from the heat and pour in a power blender with the drained cashews for 2 minutes or until the mixture is smooth
  5. Add the mixture into a flat tin and mix in the Biscoff spread. Leave in the fridge until set (around 2 hours)
  6. Cut into bars and add back into the freezer to set for a little more
  7. Break the chocolate into small pieces and add into a microwave-safe bowl. Heat until melted. Pour into a thin cup (so you are able to dip the bars in it)
  8. Remove the bars from the freezer and dip them halfway into the melted chocolate. Add back into the freezer for 5 mins and add more chocolate into the glass (add back into the microwave if the chocolate starts to firm up)
  9. Finish the other half off and sprinkle desiccated coconut.
  10. Enjoy!
