It's Ice Cream Time!
Ingredients for 6 ice cream bars:
- 250ml plant cream
- 50ml oat milk
- 4tbsp maple syrup
- 1tbsp custard powder
- 1tbsp vanilla paste
- 100g cashews (soaked in boiling water)
- 2 tbsp Biscoff spread
- 200g 70% dark Chocolate
- Desiccated Coconut - optional
Method:
- Soak the cashew nuts in boiling water for 1 hour
- Add the plant cream and oat milk to the pan with the maple syrup, custard powder and vanilla
- Whisk together on medium heat until boiling
- Remove from the heat and pour in a power blender with the drained cashews for 2 minutes or until the mixture is smooth
- Add the mixture into a flat tin and mix in the Biscoff spread. Leave in the fridge until set (around 2 hours)
- Cut into bars and add back into the freezer to set for a little more
- Break the chocolate into small pieces and add into a microwave-safe bowl. Heat until melted. Pour into a thin cup (so you are able to dip the bars in it)
- Remove the bars from the freezer and dip them halfway into the melted chocolate. Add back into the freezer for 5 mins and add more chocolate into the glass (add back into the microwave if the chocolate starts to firm up)
- Finish the other half off and sprinkle desiccated coconut.
