Vegan French Toast with Roasted Peaches

French Toast with Roasted Peaches Image

Ingredients 🗒- Makes 4 slices

  • Vegan brioche loaf or white loaf - 4 sliced thickly

  • 200ml alpro soya cream

  • 2tbsp cornflour

  • 1tbsp vanilla extract

  • 100g caster Sugar

  • 1tbsp ground cinnamon

  • 2 peaches - sliced

  • 3 tbsp soya yoghurt

Method 👩‍🍳

  1. Heat up a large nonstick frying pan on a medium heat.
  2. Mix the cream, cornflour and vanilla and half the sugar sugar in a bowl.
  3. Butter both sides of the bread then dip the slices of bread into the bowl, one at a time.
  4. Once dipped, add into the pan and cook each side for 2 minutes or until it's golden brown and crispy on the outside but soft in the middle.
  5. Mix the rest of the sugar and cinnamon together on a plate.
  6. Remove the toast from the pan and coat them in the sugar.
  7. Add the peach slices to the same pan and roast until golden and soft.
  8. Layer the french toast on a plate, add the peaches on the top followed by the soya yoghurt.
  9. Share with friends (if you wish 😌)
