Plant-based meat - we love shawarma from Vivera
Naan bread, we like it flavoured but plain is
Salad:
100g red cabbage - finely sliced
1 small red onion - finely sliced
1 sprig of finely chopped rosemary
Splash of red wine vinegar
Splash of soy sauce
Dressing:
150g plain soya yoghurt
100g grated cucumber (the middle is very water so don't use this part)
Small bunch of finely chopped coriander
10 leaves of finely chopped mint
Sprinkle of cracked black pepper
Sprinkle of cumin
Generous pinch of salt
Extra toppings:
Olive tapenade
Finely slice red chilli

Preheat the oven to 200c

Add all the salad ingredients into a bowl and give it a good mix and leave to lightly pickle. For the dressing, mix all ingredients together in another bowl

Add the naan bread onto a tray, drizzle with olive oil and place into the oven for 6 minutes

Warm a small pan to high heat. Add a drizzle of sunflower oil and place the Shawarma meat into the pan. Cook on high heat until it's crispy

Remove the naan from the oven and add to a plate followed by the salad, shawarma meat and the dressing finish with toppings of your choice. We used olive tapenade and finely sliced chilli to give it a kick.
